Greek Salad

INGREDIENTS
  • 1 box Hydroponic rocket

  • 500g Yellow cherry tomatoes, halved

  • 500g Cucumber, cubed

  • 50g Kalamata olives, pitted and halved

  • 100g Organic feta cheese

  • 1 Lemon, juiced

  • 10ml Organic olive oil

  • Salt and pepper to taste

  • Fresh chopped mint

 

DIRECTIONS
  1. In a large bowl, mix the tomatoes, cucumber, olives and rocket

  2. Mix the olive oil with lemon juice and salt and pepper and stir until it becomes a smooth dressing.

  3. Mix the dressing with the vegetables and place on a large plate.

  4. Crumble the feta cheese over the top and garnish with the chopped mint.

  5. Add the end drizzle with some good olive oil and serve on the table.

 

SOUTH STREAM TIPS

Very healthy Summery Salad. You can also add some smoked salmon or some thin slices of Prosciutto. Eat with some fresh pita bread.
