Stuffed BBQ Rainbow Trout with New Potatoes

INGREDIENTS

  • 1 Whole rainbow trout

  • 1 Lemon, juiced

  • 1tsp Butter, salted

  • 1 Lemon, sliced into rings

  • 1 Sprig of thyme

  • Salt and pepper

  • 1kg Baby potatoes

  • 1box Cherry tomatoes, halved

 

DIRECTIONS

  1. Get your rainbow trout and leave at room temperature for 30 minutes

  2. In the cavity of the trout put the butter, lemon rings and thyme

  3. Season with lemon juice, salt and pepper

  4. Boil the baby potatoes half way in salted water, set aside

  5. Get your BBQ screaming hot

  6. Place the fish on the BBQ and get a nice sear on both sides

  7. Fish should be done in 8 to 10 minutes

  8. Add the baby potatoes and cherry tomatoes to the BBQ and give a nice sear as well

  9. Serve
