300g Queen snapper fillet
1pkt Panko bread crumbs
3 NZ free range eggs
100g White flour
50g Corn flakes
1bottle Rice bran oil
Cut the fish into strips (around 1 inch width).
Season the fillets with salt, pepper.
Prepare your breading station: 1 bowl with flour, 1 bowl with the eggs and 1 bowl with the panko crumbs.
Whisk the eggs gently until smooth. Add the corn flakes to the bread crumbs and mix together.
Now coat the fillet one by one, starting with flour, then the eggs and at last the corn flakes and bread crumb mix.
Push gently so the bread crumb mix hold on to the fish.
In a pot, pre-heat the rice bran oil to 185°C.
Add the fish fillet one by one.
Fry until golden and crispy.
Serve with some fresh garden salad and lemon wedges.
