Viennese Apple Strudel

INGREDIENTS

 

  • 2 organic Eureka lemon juiced

  • 1kg organic fuji apples

  • 1pkt gluten free bread crumbs

  • 100g clover unsalted butter

  • 1tsp cinnamon ground

  • 1tsp vanilla extract

  • 20g caster sugar or brown sugar

  • 20g raisins

  • 50ml brown rum

  • 1pkt pre made puff pastry

  • 1 free range egg

 

DIRECTIONS

  1. Roll out the puff pastry on a floured surface until paper thin.

  2. Melt the butter in a pot and brush the puff pastry sheet with the melted butter.

  3. Sprinkle the bread crumb on top.

  4. Peel the apples and cut into 1/2 inch slices.

  5. Put the apples in a bowl and add the lemon juice, sugar, cinnamon, vanilla, rum, and raisins. Mix and let it rest for 30 minutes.

  6. Spread the apple mixture on the pastry, covering half of it.

  7. Now roll the pastry over and put on a buttered baking sheet.

  8. Swirl the egg in a bowl and brush on the Strudel covering all of it.

  9. Put in a pre-heated 160 °C oven for 30-45 minutes until golden brown.

  10. Cut the strudel into pieces, sprinkle with icing sugar and serve with whip cream or vanilla ice cream.
